Peaberry Coffee is made from a naturally occurring coffee bean mutation. While a regular coffee cherry contains two coffee beans, occasionally only one will develop and grow. This results in a single, round coffee bean – a peaberry! However, this mutation only accounts for about 5% of the coffee beans in a harvest. This is why it is such a prized bean.

Because of how it develops and roasts, peaberry coffee noticeably differs in flavor from regular coffee beans. Most notably, it will be a lot more complex in the upper range of flavors and aromatics , as well as a more syrupy mouth feel. Important factor in flavor is the processing method. This peaberry is made with washed coffee, which means the coffee was cleaned completely from all pulp and mucilage before drying. The result is a clean, classic coffee flavor – the perfect cup for any occasion

The Hawaiian climate of the region provides sunny hot mornings, then a characteristic cloud filled afternoon with light rains. Then at night the cold mountain air flows off of Mauna Loa towards the coast cooling the region and allowing the coffee plants to store energy and sugars within the ripening beans.
